Cinnamon & Sugar Pretzels

Yet another post dedicated to food. My blog seems to have a reoccuring theme! Last night while browsing through recipes, I stumbled across this beauty. I highly recommend it.
 

Cinnamon & Sugar Soft Pretzels
Yields 8 Pretzels - You may want to consider doubling the recipe - Hector and I devoured these babies within an hour. 

Dough:
2 1/2 C flour
1/2 Tsp salt
1 Tsp sugar
2 1/4 tsp yeast
1 C warm water
3 Tbs butter, melted

Topping:
1/2 C warm water
2 Tbs baking soda
3 Tbs butter, melted
2 Tbs sugar
1 Tsp cinnamon

Place all dough ingredients into your stand mixer, and beat until combined. Knead the dough by hand or machine for five minutes. Cover dough and let it rise for thirty minutes.

Preheat your oven to 500 F. Prepare two baking sheets by lining them with parchment paper (this will make for an easy clean up).

Transfer dough to a lightly greased surface and divide it into eight equal pieces. Allow pieces to rest, uncovered, for five minutes. While dough is resting, combine the 1/2 C warm water and the 2 Tbs baking soda and place it in a shallow bowl (make sure baking soda is dissolved before dipping the pretzels).

Roll each piece of dough into a long, thin rope and twist each rope into a pretzel. Dip each pretzel in the baking soda wash and place on baking sheet. Allow pretzels to rest, uncovered, for ten minutes.

Bake the pretzels for eight to nine minutes, or until they are golden brown. Remove pretzels from oven and brush them with the melted butter and sprinkle (pour) on the cinnamon and sugar.
